Cake Mix Cookies

My latest cookie obsession has been cake-mix cookies. They are simple and easy and require no mixer. Just a bowl and a wooden spoon. I can make them after the kids get in bed and have them to put in Joshua's lunch the next day. I know, I know... not really anything new, but I was amazed at how many different kinds I found. I am still working on trying out a couple, but so far, this one is my favorite. It's double chocolate (yeah, huge surprise there, right!?)


Chocolate Cake Mix Cookies

1 (18.25 oz) pkg chocolate cake mix
1/2 cup butter, softened
2 eggs
1 cup semi-sweet chocolate chips

Preheat oven to 350º. In a medium bowl, stir together the cake mix, butter, and eggs with a wooden spoon until well blended. Mix in the chocolate chips (sometime I add more than it calls for). Drop by teaspoonfuls onto ungreased baking sheet. Bake for 8-10 minutes. Allow cookies to cool on sheet for a few minutes before removing to a wire rack. Let cool completely. Store leftovers in airtight container.
